Hommage à Hans Freitag

In the early 1970’s I would spend more time on the farm of Hans Freitag (in Herrliberg, canton of Zurich) than in school. Hans Freitag had a very big impact on my life as he aroused my passion for agriculture. Whether on the tractor or with the cows in the barn, this was a very happy time for me. Foolishly I told my father I didn’t need school, as I was going to become a farmer (which I eventually did). He gave me one-way ticket to boarding school in Lausanne. As Hans Freitag has inspired me for this work, I have paid tribute to his teaching with my first bottle of old vines, with a double green harvest.

Year: 2015

Soil: Limestone with clay-gravel silt texture

Age of vines: forty-five years

Yields: 45 hl / ha or 4.5 dl / m2

Harvest: Handpicked, in crates, sorted in the vineyard

Pressing: Long and soft

Vinification: in Stainless steel vats; 50% Malolactic fermentation on one of two vats

Tasting: In the nose, flowers and hints of white peach. There is also a light touch of anis. The freshness is underscored by a slight carbonic touch without bringing any bitterness to the wine. The finish is long and delicate for this mature wine with great ageing potential.

Food: Appetisers, Fish, Seafood, Poultry, dried meat, Cheese (especially Gruyère).

Best: 2020 to 2045 as the freshness of this wine gives it superb balance and harmony for at least two decades
