Hommage à Nicolas Bagnoud
Nicolas Bagnoud is a vintner and winemaker from Valais. I sat in Oenology class with his sons at Changins. We were fortunate to have Nicolas explain to us the complex processes of the chemical interactions. Then everything became clear and seemed easy. Nicolas has not only an immense knowledge and wisdom, but he has a Midas touch in winemaking.

Variety: Chasselas
Year: 2017
Soil: Limestone with clay-gravel silt texture
Age of vines: forty years
Yields: 65 hl / ha or 6,5 dl / m2
Harvest: Handpicked, in crates, sorted in the vineyard
Pressing: Long and soft
Vinification: 70 % in Stainless steel vat, 30 % in two French oak barrels, of respectively 3 and 4 wines. No Malolactic fermentation.
Tasting: In the nose, a discreet hint of citrus fruits. The palate is marked by freshness and mineral a finish, again with the presence of citrus fruits.
Food: Fish, Seafood, Oysters, white meat, Cheese (especially Gruyère).
Best: 2020 to 2035. Ideally the wine should be decanted and opened a few hours prior to drinking
